The typical pork roast composed of bacon and pork loins is processed completely by hand: the parts are initially subjected to an infusion process based on spices and aromatic plants, following which they are gently massaged, and finally joined to form the typical cylindrical shape. The distinctive browning on the outside comes from cooking, carried out by first placing the porchetta in steam ovens and then roasting it.
The outer browning is slightly amber, the result of the final roasting. In contrast, the interior is pinkish and soft. On the palate, it is sweet, delicately smoky, and evenly salty.

THE BEST WAY TO STORE THE PRODUCT
Porchetta Vida is a quality product: therefore, low in preservatives and antioxidants. Therefore, once opened it should be cut and consumed as quickly as possible, taking care to store it at a temperature between 0° and 4°. It can also be placed in vacuum or atm, extending its natural shelf life by a few days.
TASTING AND PAIRING
In order for it to express the best of its processing as well as the typical aromas of cooking, Porchetta Vida should be eaten not too cold and thinly sliced with a slicing machine. It is recommended to be paired with rosé or red wines such as Merlot or Cabernet Sauvignon, which better enhance its flavors.
