We use only the best pork nuts, carefully selected and externally defatted. We flavor them thanks to our natural infusion prepared with a mixture of spices and aromatic plants, the result of a recipe created by Luigi Vida in 1966. After a long massaging and curing phase, during which the nuts acquire our typical taste and softness, they are shaped out of the mold by the skilled hands of our pork butchers and subjected to two phases of slow cooking: the first by steam, to maintain fragrance and organoleptic qualities; the second to smoke the mini-hams with shavings of natural dried beech and juniper berries, capable of giving the special flavor and external browning.
The exterior browning is amber, the result of the second smoking. In contrast, the interior is pinkish, soft, and with a firm slice. The palate is sweet, delicately smoked, and with a typical spicy flavor of barbecued roast.

THE BEST WAY TO STORE THE PRODUCT
Our mini “PRAGA” is a quality product: therefore with low content of preservatives and antioxidants. Therefore, once opened it should be cut and consumed as quickly as possible, taking care to store it at a temperature between 0° and 4°. It can also be placed in vacuum or atm, extending its natural shelf life by a few days.
TASTING AND PAIRING
In order for it to release the typical aromas of cooking, mini “FESTOSO” ham should be eaten not too cold and thinly sliced with a slicing machine. We recommend pairing it with rosé or red wines such as Merlot or Cabernet Sauvignon, which better enhance its flavors.
