Produced only with selected fresh pork meat from the best organic farms. To the finest cuts we add, in the utmost respect for country tradition, spices and natural aromatic plants to add flavour. Stuffed into natural glued casings, it is then delicately dried, because the seasoning phase is fundamental: the rooms replicate what happened in the old Friulian cellars, taking advantage of the particular microclimate of the Cividale hills and of the two small lakes adjacent to the seasoning rooms, with a continuous change of fresh and sparkling air. The Friulian tradition of us artisan producers, the experience of our pork butchers, and the use of noble cuts allow us to obtain a particularly tasty and soft salami, even if aged for long periods.
SEASONING
60/75 DAYS AFTER THE DRYING PHASE
Externally, it has its natural mould (which must be white), an indication of correct maturing. The colour of the inside of the product is ruby red for the lean part and white for the fatty part. The taste is full and typical of a quality matured product, with a balanced savoury taste.
WITH
only fine cuts of organic pork, the right balance between salt and pepper, and a lot of passion in making cold cuts since 1966.

processing aids, gluten, milk derivatives and caseinates, starches, GMOs. THE BEST WAY TO STORE THE PRODUCT
Our Soppressa is a quality product, with a low content of preservatives and antioxidants. Before opening, it should be stored in a cool, ventilated place. Once opened, it should be cut and consumed as quickly as possible, taking care to store it at a temperature between 0° and 4°. It can also be vacuum-packed or placed in atm, extending its natural shelf life by a few days.
TASTING AND PAIRING
Our Soppressa BioVida should be eaten cold and cut with a slicing machine. We recommend pairing it with red wines such as Merlot Friulano or the typical Refosco dal Peduncolo Rosso, which better enhance its taste.
