“BRACE” roasted High-Quality Cooked Ham

Obtained using only carefully selected pork thighs, which are flavored thanks to our natural infusion of more than 18 spices and aromatic plants, the result of the recipe created by Luigi Vida in 1966, which gives the unmistakable taste of “Brace Vida”. After a long massaging phase where the thigh is lightly chilled, it is shaped out of the mold and tied thanks to the skilled hands of our pork butchers. The first cooking phase is slow and through steam to preserve the best characteristics of the meat. Subsequently, a second roast cooking gives it its typical browning and unique taste.

Logo with the words "due fette" above two slices of salami. Below, a ribbon displays "GRANDI SALUMI GAMBERO ROSSO" alongside a red shrimp graphic. The design is enclosed in a green arch.

The external color is typically dark amber, the result of roasting. The inside, on the other hand, is pinkish, soft and with a compact slice, capable of melting in the mouth like a true High Quality Ham. The ham is sweet and delicately flavored, with the right balance of salt.

WITH
Selected pork legs, Vida infusion of natural spices and aromatic plants, moulding outside the mould by hand, manual tying of the ham, slow steaming for more than 20 hours, second roasting and a lot of passion in making cold cuts since 1966.

WITHOUT
processing aids, gluten, added polyphosphates, milk derivatives and caseinates, monosodium glutamate, starches, GMOs. It also does not contain substances or products that cause allergies or intolerances according to Annex II of Regulation (EU) 1169/2011.

THE BEST WAY TO STORE THE PRODUCT
Our “BRACE” Cooked Ham is a “High Quality” ham: therefore with low content of preservatives and antioxidants. Therefore, once opened it should be cut and consumed as quickly as possible, taking care to store it at a temperature between 0° and 4°. It can also be placed in vacuum or atm, extending its natural shelf life by a few days.

TASTING AND PAIRING
In order to release the typical aromas of the cooking process, “BRACE” ham should be eaten cold and cut thinly with a slicer. It is advisable to match it with rosé wines such as Langhe Rosato or Pinot Grigio Ramato, which better enhance its taste.
